Savoury Broccoli Cakes

Makes 12 cakes

Equipment
Stand mixer or electric beaters
12-cup muffin tin, greased and floured well (or silicone)

Ingredients
12 trimmed broccoli florets (each one should fit into a muffin cup with room to spare)
275g (1 cup and 2.5 tbsp) butter, softened 
50g  (1/4 cup) sugar
4 large eggs, at room temperature
300g (1 1/4 cup) flour
1 tsp. baking powder
1 tsp. turmeric
1/2 tsp. cayenne pepper
1/2 tsp. salt
60g (full 1/4 cup) strong cheddar cheese, grated

300ml (1¼ cups) milk
30ml (2 Tablespoons) Huletts Golden Syrup
100g brick margarine
397g can full cream sweetened condensed milk
5ml (1 teaspoon) vanilla essence

Ingredients

375ml (1½ cups) Huletts White Sugar
90ml (6 Tablespoons) Huletts Golden Syrup
30g brick margarine
5ml (1 teaspoon) bicarbonate of soda

Method

  1. Place the sugar and the syrup in a heavy-based saucepan. Stir to combine, then slowly bring to the boil.
  2. Add the margarine and stir until the sugar is dissolved. Bring to the boil, and boil for 3 - 4 minutes.
  3. When the mixture begins to turn brown, remove from the heat.
  4. Sieve in the bicarbonate of soda, then stir until the mixture froths up.
  5. Pour the frothing mixture into a greased 22cm square pan. Leave to set until cold and hard.
  6. When set, crack into pieces by tapping it with a wooden spoon. Store immediately in an airtight container.

500ml (2 cups) milk
60g Huletts SunSweet Brown Sugar
A few drops vanilla essence
Ground nutmeg
Huletts SunSweet Brown Sugar for sprinkling

This is a very popular South african Teatime treat/Dessert a plus in its favour is it can be made in advance.The traditional version is made with a Puff Pastry base but I find a short crust type base makes it much easier to cut and handle.The filling can also be put into Custard cups and served as a milk pudding.

SERVES 10 -12
Ingredients

Pie Crust

* 125 g butter
* 1/2 cup sugar
* 1 egg
* 2 cups flour, sifted
* salt, sifted

Filling

* 1 liter milk
* 1 tablespoon butter
* 1 cup sugar
* 2 eggs
* 3 tablespoons cornflour (cornstarch)
* 3 tablespoons flour
* 10 ml vanilla essence

2-3 cloves garlic, crushed
2 onions choppoed
2ml ground turmeric
2ml ground cinnamon
2ml ground ginger
5ml ground corriander
2 sticks table celery, chopped
1 green pepper, seeded and diced
750ml cooked chickpeas, drained (3 tins)
125ml chopped parsley
1 x 410g can chopped tomato and chilli
2 bay leaves
250ml vegetable stock
5ml salt or 10ml vegetable salt
5ml sugar

Kneadless Irish Brown Bread

  • 4 cups brown flour
  • 1 1/2 cups white flour
  • 3 oz. wheatgerm
  • 1 large onion, minced
  • pinch of salt
  • 2 tsps. baking soda
  • 4 oz. butter
  • approx. 1 1/2 pt. sour milk or buttermilk

Cheese Puffs

Ingredients:
1 cup flour
3/4 cup grated cheese
1/2 tsp salt
1 egg beaten into 3/4 cup milk
1 TBS melted butter
4tsp baking powder
Pinch of Cayenne Pepper
 
Method:
Mix all ingredients together. Place spoonfulls into greased pattie tins.
 
Baking Time:
Bake at 240°C for approx. 10 minutes - (makes 6)
